    For those wanting Instant Yeast dosage. 0.63% of the weight of flour in instant yeast, for regular use. 1% of the weight of the flour for faster fermentation times. This holds true for all general purpose instant yeasts including Fleischmann's Rapid Rise. I would add that their temperatures are very high too. 86F will give rapid fermentation. I ferment dough at 75F to get longer fermentation times of a few hours. Slower fermentation gives better bread flour. Also - do not skip the first fermentation. This is where the gluten structure and flavour is developed. Commercial baking uses intense mixing in order to skip the first (bulk) fermentation stage. Only skip it if you want to bake flavourless bread just like the rubbish in the supermarkets. (I am a baking tutor FWIW).

    Bread is a fermented product. Like all fermented products a slower fermentation develops more flavour. Going for fast fermentation will give bread with much poorer flavour. There is a lot of science behind this post. If anyone wants to follow it up check out dough acidity and flavour development.

    I am between 7000 and 8000 feet of elevation… Does the temperature and water need to change? Or wait time to let it rise? Even though this video says no wait time.

    I have never experienced dead yeast. Many people blame the yeast. My experience is that it may be the bakers

    18.9g or 0.67 oz of fresh yeast is equal to 7g dry yeast (one packet) thanks to red star yeast website for explanation, I tried this, it works.

      It’s not a recipe. This is teaching a technique. It’s very simple to understand. It’s teaching how to make the bread in 1/2 of the time by eliminating a second rise. It really is that easy.

    If it isn’t foaming try microwaving it a bit, as the temperature may not be hot enough (even if your thermometer says it is). I thought mine was, but the yeast wasn’t doing much of anything, so I microwaved the mixture in increments until I saw some foaming action, then microwaved it a bit more as it didn’t seem like enough, and now it’s foaming pretty well. Worth a shot before you throw it out.

    I've tried 6 times to make a soft yeast bread. At first I used Walmart's brand - it never bubbled. So finally I bought some Fleischmann's active dry yeast and it never bubbled. All the yeast was in date by far, but it never bubbled. I have no clue what else to try. I've used active dry yeast in the past and it bubbled.

      It’s possible your thermometer (if you’re using one) isn’t reading correctly. I thought mine was at an acceptable temperature, but not much was happening, so I decided to microwave the mixture in increments (start small) to see if that would work, and I got some foaming/bubbling action.

    Great tip, but the problem I would have with commercially available cornstarch, regardless of the brand name, when it comes to eating healthy foods, is that unfortunately MONSTER-SANTO over decades ago, managed to contaminate over 90% of ALL the corn planted, grown and harvested in the U.S. with their GENETICALLY MODIFIED CRAP. Plus many other countries' crops around the world, in their obsession to control the world's food supply!
